Ann’s Favorite Cabbage Recipe

I await fresh lemons.

I await fresh lemons.

Here’s a recipe I adapted from one of Jill Nussinow‘s (the Veggie Queen) delicious recipes.  If you want to explore more of her wonderful cooking tips, recipes, and learn more about using pressure cookers, here’s the link to her website:

Ann’s Favorite Cabbage Recipe:

I use all organic produce and spices (when I can find them)

  • 1 T extra virgin olive oil or organic canola oil
  • 2 Serrano chiles, sliced lengthwise into strips
  • 1/2 medium yellow onion cut in half and thinly sliced
  • 1/2 large head green cabbage thinly sliced
  • 1 teaspoon turmeric
  • 1/4 teaspoon ginger
  • salt to taste
  • the juice of 1/2 small lemon or lime
  1. Sautee the chiles and onions in oil in medium-hot cast iron skillet;
  2. Add cabbage and toss until it just starts to lose its crispness–this happens FAST (don’t overcook);
  3. Add spices and salt and stir;
  4. Remove from heat and sprinkle on lemon or lime juice;
  5. Serve immediately.

It is so delicious and nutritious! Substituting lemon juice for lime juice definitely changes the flavor.  Hands down, it is my favorite cabbage dish.

Tips:

  • I use a cast iron skillet, but if you use a non-stick skillet you can reduce the amount of oil.
  • Serranos are usually HOT.  You can substitute jalapeños and remove the seeds and membranes to make the dish milder.
  • Please use organic canola oil because most canola comes from genetically modified crops.
